Our 7,000 square foot facility houses indoor incubation and cultivation, shelf-stable mushroom product processing, as well as mail order and special delivery prep.  In the future we will offer grow-your own mycology training and cooking classes.

We can grow special order mushroom species at the request of our customers. We make our own spawn on site and pride ourselves in our ability to meet specialized customer requirements.

A large and robust fungi with a wonderful savory, meaty flavor and texture, this is an incredibly versatile mushroom to cook with. 

Cooking - Can be seared like scallops, grilled, sliced thin and seasoned to taste and pan-fried to a crispy bacon-like substitute.

This is a hardy, aromatic, velvety local variety that takes on flavors easily due to its delicate and tender nature.

Cooking - Its mild, earthy flavor is ideal for an array of dishes, as an appetizer battered and fried, sandwiches, salads, stir-fries and more.

Lion’s Mane

(Hericuim Erinaceus)

Lion’s Mane continues to rise in popularity for its texture, taste and many medicinal properties for mind and body.

Cooking - Seafood-like, spongey, and juicy, this mushroom is evocative of crab meat.

Health - Known as the brain boosting mushroom, Lion’s Mane is also known for its anti-inflammatory properties, and contains small amounts of phytosterols like ergosterol, which may help lower cholesterol

Attractive coral-like fungi, from the same family as Lion’s Mane, though a tad more delicate and tender, yet meaty.

Cooking - Light, tender, earthy and meaty texture and flavor similar to Lion’s Mane, though without the seafood resonances. Great sautéed or battered and fried.

A foraging favorite known for its distinctive orange and yellow body, harvesting at optimal fruiting stage ensures texture, flavor, and health properties are maximized.

Cooking - Diverse chicken substitute! Mild flavor, lemon undertones, tenderness of chicken or lobster, great for marinading and grilling, or in sautés, stews, stir-fries, wraps, salads, you name it!

This cap and stem mushroom with a burgundy color loves the sun and grows quickly in the woods or on wood piles.  They can be small in size or huge, earning the name Garden Giant.  

Cooking - When the caps are hand-sized, cooking yields an array of flavor essences, from potatoes to asparagus and artichokes.  A great portobello substitute.

Health - A delicious source of vitamin D. Wine caps also offer many other nutrients such as protein, fiber, calcium, amino acids, iron and copper.
